The next time you bite into a golden McDonald's French fry, you just might be eating the NDSU-developed potato variety Dakota Russet, the most recent variety approved by McDonald's for their world famous French fries.

Dakota Russet was developed by North Dakota State University potato breeder Asunta “Susie” Thompson and her team and was released in 2012 by the North Dakota Agricultural Experiment Station.

Dakota Russet is an attractive multi-purpose potato that boasts high yield of uniform tubers and resistance to sugar ends and cold induced sweetening. It is suitable for fresh consumption, fresh and frozen processing, and has excellent French fry quality.
