Rosemary Apple Pecan Chicken Salad

Description

The perfect light chicken salad for lunch or a picnic.

1 pound boneless, skinless chicken breast, cooled and diced
1¼ cups apples, chopped
 ⅓ cup pecans, chopped
 ⅓ cup dried cranberries

Dressing Ingredients

1 (5.3 ounce) container fat-free plain Greek yogurt
2 tablespoons mayonnaise
1 tablespoon red wine vinegar
2½ teaspoons fresh rosemary, finely chopped
1 teaspoon Dijon mustard
½ teaspoon honey
½ teaspoon onion powder
Salt and fresh ground black pepper (to taste)

Directions

Combine chicken, apples, pecans and cranberries in a large mixing bowl. In a separate, small mixing bowl, stir together dressing ingredients. Season with salt and pepper. Pour dressing over chicken mixture and toss to coat evenly. Serve on lettuce or whole grain bread.
